01. how to make a matcha latte?

Different people enjoy different levels of boldness. Our go-to is the 4-40-120 ratio.

4g matcha, whisked
40g water at 65–75°C
120g iced oatmilk, poured over
Why temperature matters
The right amount of heat releases umami notes without burning the matcha into astringency.
Honmei
Its chocolate notes shine best at 70°C.
Yugen
Play around 70–85°C. Lower releases more sweet umami, higher brings out the savory side.
Genmaicha & gyokuro
Same 4-40-120 ratio.
Hojicha
Use 5-50-100 instead.

02. how to properly store it?

Matcha is sensitive to heat, light, air, and moisture.

Keep it cool and dark
A cool, dark place works, but the refrigerator is best.
Keep it sealed
Air oxidizes matcha, while light and heat make it dull and less flavorful.
